1 cup of chopped walnuts
1/2 cup of natural peanut butter
1/4 cup of honey or maple syrup
1 cup of grated carrots
1 teaspoon of vanilla extract
1 teaspoon of ground cinnamon
1/2 cup of protein powder
2 tablespoons of chia seeds
1/2 cup of raisins
Instructions
In a large mixing bowl, combine the rolled oats, chopped walnuts, natural peanut butter, honey or maple syrup, grated carrots, vanilla extract, ground cinnamon, protein powder, chia seeds, and raisins. Use a sturdy spatula or your hands to mix thoroughly until all ingredients are well incorporated.
Once mixed, cover the bowl with plastic wrap and let it chill in the refrigerator for about 10 to 15 minutes.
After chilling, scoop out tablespoon-sized portions of the mixture, roll them into balls, and place them on a parchment-lined baking sheet.
Return the protein balls to the refrigerator for another 10 to 15 minutes to fully set.
