1 ½ cups of diced Fresh Strawberries2 ½ cups of All-purpose flour1 ½ cups of granulated sugar2 teaspoons of Baking powder½ teaspoon of Salt1 cup of softened Unsalted butter4 large Eggs1 cup of Buttermilk2 teaspoons of Vanilla extract
Preheat your oven to 350°F (175°C).Grease and flour two 9-inch round cake pans or use parchment paper.In a large bowl, whisk together the flour, baking powder, and salt.In another large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 4-5 minutes.Add the eggs one at a time, fully incorporating each before adding the next. Pour in the vanilla extract and mix until smooth.Gradually add the dry mixture to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined.Gently fold in the diced strawberries.Divide the batter evenly between the prepared pans. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.Allow the cakes to cool in their pans for about 10 minutes before transferring to a wire rack to cool completely.Frost with cream cheese frosting or whipped cream and garnish with strawberries.
