2 pounds of ripe tomatoes
3 tablespoons of olive oil
1 medium onion, chopped
4 cloves of garlic, minced
1/4 cup of fresh basil, chopped
1 teaspoon of salt, or to taste
1/2 teaspoon of pepper, or to taste
1 teaspoon of sugar (optional)
Instructions
Begin by washing your ripe tomatoes thoroughly under cool, running water. Remove the stems and slice them into quarters. If you prefer a smoother sauce, you can also peel the tomatoes by blanching them in boiling water for 1 minute.
In a large saucepan over medium heat, add 3 tablespoons of olive oil. Once hot, add the chopped onion and sauté for about 5 minutes until translucent. Stir frequently to prevent burning.
When the onions are soft, toss in the minced garlic and cook for an additional minute. Be careful not to let the garlic brown, as it can turn bitter.
Add the quartered tomatoes to the saucepan, along with the salt and pepper. If you opted for sugar, add it at this time. Stir everything to combine and allow it to simmer.
Cover the saucepan and reduce the heat to low. Allow the sauce to simmer for about 25 minutes, stirring occasionally.
Remove the saucepan from heat and stir in the fresh basil. If you prefer a smooth sauce, use an immersion blender to puree it to your desired consistency. Taste and adjust the seasoning.
