1 lb of boneless chicken thighs
1 cup of orzo pasta
2 tablespoons of Cajun seasoning
2 tablespoons of olive oil
1 cup of bell peppers (red and green), diced
1 medium onion, chopped
3 cloves of garlic, minced
4 cups of chicken broth
1/2 cup of heavy cream
1/4 cup of parsley, chopped (for garnish)
Instructions
Step 1: Marinate the chicken by combining the chicken thighs with 1 tablespoon of Cajun seasoning and a tablespoon of olive oil. Allow to marinate for at least 10 minutes.
