  • 1 lb. shrimp, peeled and deveined
  • 1 lb. scallops, patted dry
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 cup heavy cream
  • 1 cup dry white wine
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste

  • Instructions

  • Bring a large pot of salted water to a boil. Add the linguine or fettuccine to the boiling water and cook according to the package instructions until al dente. Drain the pasta and set it aside.
  • In a large skillet, heat the olive oil over medium-high heat. Pat the shrimp and scallops dry with paper towels and season them with salt and pepper. Working in batches if needed, sear the shrimp and scallops for 2-3 minutes per side, or until they develop a nice golden-brown crust. Remove the seafood from the pan and set it aside.
  • In the same skillet, reduce the heat to medium and add the minced garlic and chopped shallot. Sauté for 1-2 minutes, stirring constantly, until fragrant. Pour in the white wine and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Allow the wine to simmer for 2-3 minutes, then stir in the heavy cream, Dijon mustard, and lemon juice. Bring the sauce to a gentle simmer and let it thicken slightly, about 5 minutes.
  • Add the cooked pasta, seared seafood, Parmesan cheese, and chopped parsley to the creamy sauce. Toss everything together until the pasta is evenly coated. Season with additional salt and pepper to taste.
