- 1 tri tip roast (approximately 2–3 pounds)
- 1 cup beef broth (or substitute with red wine or vegetable broth)
- 3 cloves garlic, minced (or 1 tablespoon garlic powder)
- 1 large onion, sliced
- 2 tablespoons olive oil (or avocado oil)
- 2 teaspoons salt (Himalayan salt recommended)
- 1 teaspoon black pepper
- 2 teaspoons smoked paprika (or regular paprika)
- 1 teaspoon dried rosemary (fresh if possible)
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- Fresh parsley for garnish (optional)
Instructions
- Pat the tri tip roast dry with paper towels and rub with olive oil, salt, pepper, smoked paprika, rosemary, and thyme.
- Optional: Sear the roast in a hot skillet for about 3-4 minutes per side until browned.
- Layer sliced onion at the bottom of the crock pot, then place the seared tri tip roast on top.
- Sprinkle minced garlic over the roast and pour in beef broth and Worcestershire sauce around the meat.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Let the roast rest for at least 15 minutes before slicing and serve with fresh parsley garnish.
