Happy New Year Everyone !

I would like to start by saying  ‘Thank you’ to every one of you by visiting my blog, for your comments and for your inspiration. The best thing about me returning to my blog after 5 years was to discover you all and to realize there is such a wonderful,active community for me to join. I really appreciate your visits and comments, it gives me courage and inspiration to go on.

Normally, I never write down my resolutions for the year but this time, I decided to try something new. 

So here there are my  2017 GOALS 

  • Fitness: move more in general: skip the street car from the subway to work and from work to the subway. This will add 30 minutes walk daily. 
  • MoneySave more: do not remove the money form saving just because I need one more thing to buy. 
  • Food: Eat less chocolate and bread ( in this order )
  • Recreation: Do more things I like to do: knit, post on my blog, read  
  • Health: Go earlier to bed: I wake up @ 5:00 am every morning but I go to sleep around 12:00 am each night, so is definitely not enough sleep. I do wake up refreshed but around 11: 00 am I feel like I need a nap. There is the moment where chocolate craving hits. LOL 
  • Do a relaxing thing every dayPlay more with my munchkins: Steve and Sherlock. They are so different and they play in their own way so I have to play the same amount of time with both :). Steve is more active and funny so I tent to spend more time playing with him. 😦  
  • Entertainment: Meet more with my friends: my best friend told me a few weeks ago that we haven’t been to a movie in three or four years. Crazy, I know. 
  • Well being: Manage anger better: go for a walk; change the scenario; take a  bubble bath; do yoga. 

Another one of my resolutions is to drink more water. You know how it is when you’re at work: you’re stressed, you want to finish that report on time, your colleagues are always asking you for this and that and before you know it, it’s time to go home and guess what? You’ve not had a sip of water since morning. Well, that’s me. But I am trying hard to put a stop to this and to make drinking water more enjoyable, I have started drinking homemade infused water. One combination that I absolutely adore is Citrus Spice Infused Water. Aside from being wonderfully refreshing, it also helps with digestion! 

Now this is a drink that you might expect to have during the summer when the weather is stiffing hot but really, you can drink this all year round. Just skip the ice cubes. It’s just as delicious, I  promise. 

Ingredients:

2 medium lemons

1 medium lime

1 clementine 

1 small cinnamon stick 

a few cloves ( about 5 )

1 tbsp pure raw honey

1 mint tea bag 

about 10 cups of filtered water 

Wash well with hot water: the lemon, lime and clementine. Cut into slices. Add all the ingredients to a pitcher, stir and enjoy it whenever you feel thirsty.

Muffins overloaded ;)

Is there such a thing as too many berries for you? Well if there is, it’s OK. There is no such thing for me. I just love them in any form: fresh, frozen, added in muffins, cakes and pancakes …  and in any  quantity 😉

Ingredients:

  • 1 1/2 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1/2 cup brown sugar
  • 2 cups unsweetened  cashew milk
  • 1 tbsp pure vanilla extract
  • juice from one large lemon
  • 2 cups frozen blueberries ( one cup should be enough, I just wanted more ;))

Directions:

Preheat the oven to 175 C. Line a muffin tray with the muffin baking paper and set aside.

Mix the two types of flour in a large bowl.

In a separate bowl mix together the eggs and sugar until the sugar has dissolved. Add the vanilla extract and milk and mix well.

Place the frozen blueberries in a bowl then steal about two tbsp of flour and cover the berries so they won’t become watery.

Pour the wet ingredients over the dry ingredients. Add the baking powder and drizzle the lemon juice over to activate it. mix all together. Add the berries and fold them slowly.

Pour the batter with an ice scoop in each muffin paper and bake for about 20 – 25 minutes depending on the oven.

Let them stay in the tray for about 5 minutes.

Place the muffins on a rack and wait for them to cool, then enjoy them.

Poppyseed sour cream muffins :)

Last week I have made this amazing lemony and delicious muffins.

Friday morning, before work, I decided to make some muffins but I had no time to go to the grocery store so I opened the counter, looking to see what ingredients I have,when I saw the poppy seeds.

Decision made. Poppy seeds muffins it will be. I have done this version before but I never saved the recipe I used, so this time I had to look for a recipe again. I found one that sounded perfect for me because I had everything I needed right here at home.  My inspiration this time came from the Chatelaine Magazine (  on line )

Ingredients

  • 1/2 cup unsalted butter ( I used 1/2 cup of grape seeds oil )
  • 2 cups all-purpose flour
  • 1/3 cup poppy seeds
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 lemons
  • 1 cup granulated sugar ( I used 1 cup of brown sugar )
  • 2 eggs
  • 1 cup regular sour cream
  • 1/2 tsp lemon or vanilla extract ( I used lemon extract )

Let”s do it

Preheat the oven to 400F. Lightly oil a 12-cup muffin tin or line it with paper cups. In a medium bowl, stir flour with poppy seeds, baking powder, baking soda and salt. Grate peel from lemons into flour mixture and stir until well mix. Squeeze the 2 lemons into a small bowl and set aside.

In a large bowl, whisk together sugar with eggs until well mixed. Add the oil and mix until creamy. Then stir in sour cream, lemon juice and lemon extract until well mixed. Stir in flour mixture just until mixed. Divide the batter between muffin cups.

Bake them in the preheated oven for about 18 to 20 minutes. Remove pan to a cooling rack. After 5 minutes, turn out muffins and enjoy them.:)

Lemon-rosemary and tomatoes chicken tights

Vegetables are delicious, no doubt about it but I have days when I am craving for meat. So the second recipe of the last week is : lemon-rosemary and tomatoes chicken tights.

Ingredients ( 6 servings )

12 piece chicken tights ( 1. 1 kg casserole )

2 lemons

1 big tomato or 2 medium

dried rosemary

extra virgin olive oil

salt and black pepper

Let’s do it :

Wash and take most of the skin from the tights. Oil a tray with olive oil and place the tights in the tray.  Drizzle them with olive oil, lemon, rosemary, salt and pepper and cover them with lemon and tomato slices.

We served them just like that only with avocado aside. I know there are lots of proteins but as I told you before I was craving for meat …

Of course it does not mean you cannot serve them with whatever you like: rice, potatoes or vegetables …
