Broccoli cheese casserole

Recently I found a very interesting culinary blog called : simplyrecipes.com. I loved the recipes, the explanations and not at least the pictures, even though I would love to see more pictures.:)Digging and saving a lot of recipes to my bookmark I decided to try: Broccoli cheese casserole.

Checking into my fridge I realize I do have everything I need : broccoli, cheese, eggs… so nothing could stop me to try it 🙂

Ingredients:

I am going to write all the ingredients from the recipe that inspire me but I made some changes or skipped some steps.

  • 2 bunches broccoli,
  • 2 strips of thick-cut bacon, cut crosswise into 1/4-inch wide strips ( I skip this step … I haven’t use bacon )
  • 1/3 cup all-purpose flour ( I haven’t used flour either )
  • 5 eggs, beaten
  • 1/2 cup  sour cream ( I used 3% yogurt )
  • 1/2 cup whole milk
  • 1/2  tsp of black pepper
  • 1/2 tsp salt
  • 2 tsp Dijon mustard
  • 250 g cheddar cheese, grated : I used a mix of cheese : cheddar, Monterey Jack, mozzarella and  parmesan

But with al the changes and skipping steps the cheese broccoli turn out amazing.

Spinach puree with hard boiled eggs …

Spinach puree – one of my mother’s favorites dish. Still I was not able to make it like she used to do it. Hers was the best but I do not give up easily and I think this is very close with hers.

What I still want to learn is how to make her small potatoes breads … but as I said I never give up so I still see there’s a hope that one day I will make them … 🙂

Ingredients for the spinach ( 3 servings )

2 bags – 350 g- of fresh spinach

4 garlic cloves minced

3-4 tablespoons of sour cream ( 5% )

150-200 ml warm water or milk

hard boiled eggs

salt

whole wheat fresh European bread ( optional )

Wash the spinach in running water for more minutes. Place a pot with water to boil. Add some salt. When the water is boiling add the spinach. Simmer it for about 15-20 minutes. Drain the boiled spinach and let it cool. Meanwhile prepare the garlic sauce. Heat 3 tbsp of canola oil ( or any vegetable oil you like ) and add the garlic and cook it for about 1 minute. Add 2 tablespoons of flour and 1/2 cup of warm water and stir well with a whisk. Add more water if it thickens too much until you have the consistency of a cream or very smooth puree. Now you can add the sour cream and simmer for 2-3 minutes.  Set the garlic sauce aside and start prepare the spinach which should be cooled a bit.

Divide the spinach in two parts and place it on a wooden cutting board and mince it well . Add the spinach to the garlic sauce and bring it back on the stove to a low heat and cook it for about 2-3 minutes. Can be served with hard boiled eggs, fried eggs, sausages or whatever you think it works …

A different breakfast ….

Ingredients ( 3 servings )

6 eggs ( I used all 7 I had home, having  a very small ones this time )

3 celery sticks

1 green bell pepper ( you cam use every color you prefer, this time I had only green on hand )

1 bunch green onion

1 piece of dried mozzarella

salt, black pepper, dried oregano

extra virgin olive oil

avocado ( optional )

marinated backed red pepper ( optional )

Lets get started :

Wash and cut in thin stripes : green onions, celery and green bell pepper.

Beat the egg, add salt and a few drops of water.

Heat 3 Tbsp of extra virgin olive oil in a pan and add the veggies. Cook them for about 3-4 minutes until a bit soft but still crunchy. Add the beaten eggs.

Add the mozzarella : you can grated but I just cut it in pieces. Cover the pan  to make a nice crust or  bake it in the even for 5 minutes ( on the broil position ) if the pan permitted.

Now it’s time to decorate the plate and to enjoy the breakfast.
