Sushi …

When I asked my family yesterday what they would like to eat for Sunday was an unanimous vote for sushi, homemade sushi !!!

Of  course, I promised them for a few weeks now, that one day I am going to make them homemade sushi but even though I bought all that I needed, I was kind of afraid to do it.

Well today I said let’s do it !!!

Ingredients for about 40 pieces:

  • 5 seaweed sheets
  • 1 cup sushi rice
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 avocado
  • 1 can flaked salmon or tuna
  • 3-4 tbsp sesame seed ( optional )
  • 2-3 cm fresh ginger
  • wasabi
  • say sauce
  • teriaky sauce

I am going to let the picture explain you how I did it, especially because Cristina was taking the pictures and it was a very big help !!!

I always liked to have pickled ginger …but when I wanted to buy it I read the info on the jar and I gave up … I did not get  why for a pickled ginger you need so many weird ingredients ?!? So I used some pickled chili instead ….

Sunday morning sandwich

Avocado, cheese, whole wheat bread …. sounds like a perfect Sunday morning breakfast !!! Simple, quick, healthy and not at last yummy !!!

What did I use for 1 serving:

  • 2 slices whole wheat bread
  • 2 tbsp feta cheese ( shredded feta )
  • 2 tbsp cheddar mix ( shredded )
  • 2 tbsp guacamole

Of course you can use your imagination or preferences …. 🙂

Avocado salad

I was craving for days for a guacamole but then I decided to make kind of a salad instead … but it turned out so delicious, I didn’t regret my choice …

I had the salad with oven whole wheat pita.

Ingredients ( 2 servings )

  • 2 avocados
  • 1 large tomato
  • 2 tbsp extra virgin olive oil
  • 1 lemon
  • salt and paper to taste
  • green onion or garlic ( this time I haven’t use any of those because I took I serving at work for lunch so … I decided to skip them this time )
  • fresh parsley or coriander

Cut the avocado in half, remove the stone, dice the avocado and place it in the salad bowl. Peel the tomato, save only the pulp and cut it in small pieces. Add the tomato pieces to the avocado. Sprinkle with lemon juice, olive oil, salt and ground pepper. Mix all together, garnish with fresh parsley and serve it right away .

Breakfast

Avocado salad to boost your breakfast …

I love to eat avocado for breakfast … easy to make, delicious and you feel full for a few hours … but not at least because , like all my dishes I love colors on my plate and it’s so easy to  create them with tomatoes and avocado …and some berries … such an indulgence ….

Ingredients ( 4 servings )

  • 2 small avocados cut in small pieces
  • 2 medium tomatoes cut in small pieces
  • 1/4 red onion cut in small stripes
  • lemon juice ( from 1 lemon)
  • 1 tbsp grape seeds oil
  • 4-5 rings of marinated chili
  • Salt and black pepper ( optional ) to taste

Mix all the dry ingredients in a medium bowl and drizzle the wet ingredients. Season the salad with salt and black pepper.

Ready to enjoy it !!!

Chicken

Lemon-rosemary and tomatoes chicken tights

Vegetables are delicious, no doubt about it but I have days when I am craving for meat. So the second recipe of the last week is : lemon-rosemary and tomatoes chicken tights.

Ingredients ( 6 servings )

12 piece chicken tights ( 1. 1 kg casserole )

2 lemons

1 big tomato or 2 medium

dried rosemary

extra virgin olive oil

salt and black pepper

Let’s do it :

Wash and take most of the skin from the tights. Oil a tray with olive oil and place the tights in the tray.  Drizzle them with olive oil, lemon, rosemary, salt and pepper and cover them with lemon and tomato slices.

We served them just like that only with avocado aside. I know there are lots of proteins but as I told you before I was craving for meat …

Of course it does not mean you cannot serve them with whatever you like: rice, potatoes or vegetables …

Breakfast

A different breakfast ….

Ingredients ( 3 servings )

6 eggs ( I used all 7 I had home, having  a very small ones this time )

3 celery sticks

1 green bell pepper ( you cam use every color you prefer, this time I had only green on hand )

1 bunch green onion

1 piece of dried mozzarella

salt, black pepper, dried oregano

extra virgin olive oil

avocado ( optional )

marinated backed red pepper ( optional )

Lets get started :

Wash and cut in thin stripes : green onions, celery and green bell pepper.

Beat the egg, add salt and a few drops of water.

Heat 3 Tbsp of extra virgin olive oil in a pan and add the veggies. Cook them for about 3-4 minutes until a bit soft but still crunchy. Add the beaten eggs.

Add the mozzarella : you can grated but I just cut it in pieces. Cover the pan  to make a nice crust or  bake it in the even for 5 minutes ( on the broil position ) if the pan permitted.

Now it’s time to decorate the plate and to enjoy the breakfast.
