Instructions
- In a large bowl, combine the cubed chicken, olive oil, honey, soy sauce, rice vinegar, Sriracha, minced garlic, and grated ginger. Toss to coat the chicken evenly. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 2 hours, to allow the flavors to meld together.
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
- Transfer the marinated chicken pieces to the prepared baking sheet, arranging them in a single layer. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Halfway through the cooking time, give the chicken a gentle toss to ensure even browning.
