Ingredients

Scale
  • 6 boneless, skinless chicken breasts, pounded thin
  • 8 oz. cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • 3 jalapeno peppers, seeded and diced
  • 1 tsp. garlic powder
  • 1 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • Toothpicks for assembly

  • Instructions

  • Begin by pounding the chicken breasts between two sheets of plastic wrap or wax paper until they are about 1/4-inch thick.
  • In a medium bowl, combine the softened cream cheese, cheddar cheese, crumbled bacon, diced jalapenos, garlic powder, smoked paprika, salt, and black pepper. Mix until the ingredients are well incorporated.
  • Preheat your oven to 375°F (190°C). Place a heaping tablespoon of the cream cheese mixture onto the center of each flattened chicken breast. Carefully roll up the chicken, encasing the filling, and secure with toothpicks.
  • Arrange the stuffed chicken rolls on a baking sheet lined with parchment paper or a silicone baking mat. Bake for 30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • For an extra crispy and golden-brown top, you can broil the chicken bombs for 2-3 minutes after baking.
