  • 2 cups (475ml) water
  • 3 jalapeno peppers, seeded and diced (use fewer for a milder heat)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups (475ml) chopped tomatoes (fresh or canned)
  • 1 cup (235ml) frozen corn kernels
  • 1 cup (235ml) cooked rice (optional)
  • 2 tbsp (30ml) lime juice
  • 2 tsp (10ml) ground cumin
  • 1 tsp (5ml) chili powder
  • Salt and black pepper to taste
  • Chopped cilantro for garnish (optional)

  • Begin by gathering all the necessary ingredients. Peel and devein the shrimp, if they haven’t already been prepared. Dice the jalapeno peppers, onion, bell pepper, and tomatoes. Mince the garlic cloves. If you’re using cooked rice, have it ready to go.
  • In a large pot or Dutch oven, combine the chicken or vegetable broth and water. Bring the liquid to a simmer over medium-high heat. Add the diced jalapeno peppers, onion, and garlic. Let the mixture simmer for 5 minutes, allowing the flavors to infuse the broth.
  • Once the initial simmering is done, stir in the diced bell pepper, chopped tomatoes, and frozen corn kernels. Continue to cook for an additional 10 minutes, or until the vegetables are tender.
