1 cup unsalted butter
6 cloves garlic, minced
1 onion, diced
1 red bell pepper, diced
1 jalapeño, seeded and minced (optional, for added heat)
2 tablespoons Old Bay seasoning
1 tablespoon paprika
1 teaspoon cayenne pepper
1 teaspoon dried thyme
1 teaspoon dried oregano
1 cup dry white wine or seafood stock
Juice of 1 lemon
Salt and black pepper to taste
Instructions
Melt the unsalted butter over medium heat in a large saucepan or Dutch oven.
Add the minced garlic, diced onion, and diced red bell pepper (along with the seeded and minced jalapeño if using). Sauté the aromatics for 3-5 minutes.
Add the Old Bay seasoning, paprika, cayenne pepper, dried thyme, and dried oregano. Stir to combine.
Pour in the dry white wine or seafood stock, scraping any browned bits from the bottom of the pan. Simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.
Remove from heat and stir in the fresh lemon juice. Taste and adjust the seasoning with salt and black pepper as needed.
