  • 1/2 cup breadcrumbs

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

  • Instructions

  • In a large mixing bowl, gently combine the flaked imitation crab, beaten eggs, breadcrumbs, chopped onion, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper. Mix until the ingredients are well incorporated, being careful not to overmix.
  • Using your hands or a spoon, scoop out portions of the crab mixture and shape them into evenly sized patties, about 1/2 inch thick and 3 inches in diameter.
  • Heat the olive oil in a large skillet over medium heat. Carefully place the crab patties in the hot oil and cook for 3-4 minutes per side, or until they’re golden brown and crispy on the outside.
  • Transfer the cooked crab patties to a plate lined with paper towels to drain any excess oil. Serve them hot, garnished with a sprinkle of chopped parsley or a squeeze of fresh lemon juice.
