Stir in the old-fashioned oats, onion, garlic, thyme, oregano, salt, and black pepper. Mix everything together until the ingredients are evenly distributed.
Gently fold the ground beef into the oat mixture.
Transfer the mixture to the prepared loaf pan and gently press it down to create an even surface. Bake the meatloaf for 75 minutes, or until the internal temperature reaches 160°F (71°C).
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.
