1 lb. boneless, skinless chicken breasts, cubed
8 oz. cream cheese, softened
1 cup heavy cream
1 cup grated Parmesan cheese, plus more for garnish
2 cloves garlic, minced
1 tsp. dried oregano
1 tsp. dried basil
1/2 tsp. crushed red pepper flakes (optional, for a bit of heat)
Salt and black pepper, to taste
12 oz. penne or farfalle pasta
Fresh parsley, chopped (for garnish)
Instructions
Bring a large pot of salted water to a boil. Add the penne (or your pasta of choice) and cook according to the package instructions until al dente. Drain the pasta and set it aside.
In a large skillet or saucepan, cook the cubed chicken over medium-high heat until browned and cooked through, about 6-8 minutes. Transfer the cooked chicken to a plate and set it aside.
In the same skillet, reduce the heat to medium-low and add the cream cheese, heavy cream, Parmesan cheese, garlic, oregano, and basil. Whisk the ingredients together until the sauce is smooth and creamy. If you’d like a bit of heat, stir in the crushed red pepper flakes.
Add the cooked pasta and chicken to the creamy sauce and toss to combine. Simmer for 2-3 minutes, or until the sauce has thickened and the chicken is heated through. Taste and adjust the seasoning with salt and black pepper as needed.
