2 lbs Lamb, cubed
2 large Onions, diced
6 Garlic cloves, minced
2 tbsp Ginger, grated
2 large Tomatoes, diced
1 can (13.5 oz) Coconut milk
2 tsp Coriander powder
1 tsp Cumin powder
1 tsp Chili powder
1 tsp Turmeric powder
1 tsp Garam masala
Salt to taste
2 tbsp Vegetable oil
Cilantro, chopped (for garnish)
Instructions
Heat the vegetable oil in a large pot over medium-high heat. Add the diced onions and sauté until golden brown, about 5-7 minutes.
Add the minced garlic and grated ginger to the pot and continue to sauté for 2-3 minutes.
Add the cubed lamb to the pot and sear the pieces on all sides until they develop a golden-brown crust, about 5-7 minutes.
Add the coriander powder, cumin powder, chili powder, turmeric powder, and garam masala. Stir the spices into the pot and let them toast for 2-3 minutes.
Add the diced tomatoes and let them simmer for about 5 minutes. Then, pour in the coconut milk and bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let the curry simmer for 60-70 minutes, or until the lamb is tender and the flavors have melded.
Taste and adjust the seasoning with salt as needed. Garnish the dish with freshly chopped cilantro.
