Ingredients

Scale
  • 1 lb (450g) Ground kangaroo meat
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1/2 tsp Chili powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Vegetable oil
  • 810 Wooden skewers (for grilling)

  • Instructions

  • In a large mixing bowl, combine the ground kangaroo meat, finely chopped onion, minced garlic, cumin, coriander, chili powder, salt, and black pepper. Use your hands or a fork to mix the ingredients thoroughly until well incorporated.
  • Divide the kofta mixture into equal portions and shape them into oblong, sausage-like pieces, about 4-5 inches long and 1-inch thick. Gently press the mixture onto the wooden skewers, leaving a little space between each kofta.
  • Heat the vegetable oil in a large skillet or grill pan over medium-high heat. Carefully place the skewered kofta into the hot oil and cook for 5-6 minutes on each side, or until the meat is cooked through and the exterior is nicely browned.
  • Remove the cooked kofta from the heat and transfer them to a serving platter. Garnish with fresh herbs, such as chopped parsley or mint, for a vibrant presentation. Serve the kangaroo kofta warm, alongside your favorite accompaniments like pita bread, tzatziki sauce, or a fresh salad.
