  • 10 oz frozen spinach, thawed and drained
  • 4 oz crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Toothpicks or kitchen string (for securing the roll-ups)

  • Instructions

  • Begin by preheating your oven to 375°F (190°C). In a medium bowl, combine the thawed and drained spinach, crumbled feta, minced garlic, 1 teaspoon of olive oil, dried oregano, salt, and black pepper. Mix everything together until well incorporated, creating a delicious and nutrient-packed filling.
  • Lay the chicken breasts flat on a cutting board and, using a sharp knife, carefully slice them horizontally through the middle, being careful not to cut all the way through. This will create a pocket for the spinach and feta filling.
  • Spoon a generous amount of the spinach and feta filling into the center of each butterflied chicken breast. Carefully roll up the chicken, securing it with toothpicks or kitchen string to keep the filling in place.
  • In a large, oven-safe skillet or baking dish, heat the remaining 2 teaspoons of olive oil over medium-high heat. Carefully place the stuffed and rolled chicken breasts seam-side down in the hot pan and sear for 2-3 minutes, or until the chicken is lightly browned.
  • Transfer the seared chicken roll-ups to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C). The spinach and feta filling should be hot and bubbly.
