  • 4 cloves of garlic, minced
  • 2 jalapeno peppers, seeded and diced
  • 1 onion, diced
  • 2 cups diced tomatoes (or one 15-oz can)
  • 2 cups low-sodium chicken or vegetable broth
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 tbsp. olive oil
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. smoked paprika
  • Salt and black pepper to taste
  • Chopped cilantro for garnish (optional)

  • Instructions

  • Start by peeling and deveining the shrimp, if they haven’t already been prepared. Mince the garlic and dice the jalapeno peppers, onion, tomatoes, potatoes, and carrots. Gather all the spices and have them ready to use.
  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and diced jalapeno peppers. Sauté for 2-3 minutes, or until the garlic is fragrant and the peppers have softened slightly.
  • To the pot, add the diced onion, tomatoes, potatoes, and carrots. Pour in the chicken or vegetable broth and stir to combine. Bring the mixture to a simmer and let it cook for 15-20 minutes, or until the vegetables are tender.
  • Once the vegetables are tender, add the peeled and deveined shrimp to the pot. Sprinkle in the cumin, oregano, and smoked paprika. Season with salt and black pepper to taste. Simmer the stew for an additional 5-7 minutes, or until the shrimp are cooked through and opaque.
  • Remove the pot from the heat and ladle the Garlic Jalapeno Shrimp Stew into bowls. Garnish with chopped cilantro, if desired. Serve hot and enjoy the perfect balance of spicy, savory, and aromatic flavors.
