  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 tbsp unsalted butter, divided
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz penne pasta
  • 2 tbsp olive oil
  • Chopped fresh parsley for garnish (optional)

  • Instructions

  • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions, approximately 8-10 minutes, until al dente. Drain the pasta and set it aside.
  • In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the cubed chicken and cook for 5-7 minutes, or until the chicken is lightly browned and cooked through. Remove the chicken from the skillet and set it aside.
  • In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant.
  • Reduce the heat to low and slowly pour in the heavy cream, whisking constantly to prevent lumps. Stir in the grated Parmesan cheese, dried parsley, salt, and black pepper. Continue to cook, stirring occasionally, until the sauce is thickened and the cheese is melted, about 5 minutes.
  • Add the cooked penne pasta and the sautéed chicken bites to the creamy Parmesan sauce. Toss everything together until the pasta is evenly coated and the chicken is fully incorporated.
