  • Instructions

  • Begin by rinsing the sushi rice under cold water until the water runs clear. Transfer the rinsed rice to a saucepan, add 1 1/4 cups of water, and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid has been absorbed.
  • In a small bowl, combine the rice vinegar, sugar, and salt. Gently fold this seasoning mixture into the cooked sushi rice, taking care not to overmix. Allow the rice to cool to room temperature, about 10-15 minutes.
  • Lay a sheet of nori on a clean, flat surface. Spread the seasoned sushi rice evenly over the nori, leaving a 1-inch border at the top. Arrange the julienned cucumber, avocado, and carrot in a line across the center of the rice.
  • Starting from the bottom, tightly roll the nori and filling into a cylindrical shape. Wet the top inch of the nori with water to help it seal. Using a sharp, wet knife, slice the roll into 6-8 equal pieces. Sprinkle with sesame seeds, if desired.
  • Arrange the sushi rolls on a platter and serve with soy sauce, if desired.
