1 pound fresh salmon, skin removed and diced
1 cup panko breadcrumbs
2 large eggs, beaten
1/4 cup finely chopped onion
2 tablespoons lemon juice
1 teaspoon Dijon mustard

2 tablespoons olive oil or avocado oil for cooking

In a large bowl, gently mix together the diced salmon, panko breadcrumbs, beaten eggs, chopped onion, lemon juice, Dijon mustard, salt, and black pepper until well combined. Be careful not to overmix, as this can make the patties dense and tough.
