1 lb ground beef
1 cup uncooked long-grain rice
1 onion, diced
1 bell pepper, diced
3 cloves garlic, minced
2 cups low-sodium beef or chicken broth
1 tsp paprika
1 tsp dried thyme
1/2 tsp cayenne pepper (adjust to taste)
1/4 tsp ground nutmeg
Salt and black pepper to taste
Chopped parsley for garnish (optional)
Instructions
In a large skillet or Dutch oven, cook the ground beef over medium-high heat, breaking it up with a wooden spoon as it cooks, until it’s no longer pink, about 5-7 minutes. Drain any excess fat from the pan, but be sure to leave a tablespoon or two for added flavor.
Add the diced onion, bell pepper, and minced garlic to the skillet with the browned beef. Sauté the vegetables until they’re softened and fragrant, about 5 minutes.
Stir in the uncooked rice, paprika, thyme, cayenne pepper, and nutmeg. Season with salt and black pepper to taste. Pour in the broth and give everything a good stir to combine.
Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the rice is tender and has absorbed all the liquid. Fluff the rice with a fork and serve hot, garnished with chopped parsley if desired.
