  • 1 cup uncooked long-grain rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef or chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1/4 tsp ground nutmeg
  • Salt and black pepper to taste
  • Chopped parsley for garnish (optional)

  • Instructions

  • In a large skillet or Dutch oven, cook the ground beef over medium-high heat, breaking it up with a wooden spoon as it cooks, until it’s no longer pink, about 5-7 minutes. Drain any excess fat from the pan, but be sure to leave a tablespoon or two for added flavor.
  • Add the diced onion, bell pepper, and minced garlic to the skillet with the browned beef. Sauté the vegetables until they’re softened and fragrant, about 5 minutes.
  • Stir in the uncooked rice, paprika, thyme, cayenne pepper, and nutmeg. Season with salt and black pepper to taste. Pour in the broth and give everything a good stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the rice is tender and has absorbed all the liquid. Fluff the rice with a fork and serve hot, garnished with chopped parsley if desired.
