Ingredients
Scale
- 2 pounds ground venison
- 1/4 cup soy sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- In a medium-sized bowl, combine soy sauce, Worcestershire sauce, brown sugar, onion powder, garlic powder, black pepper, smoked paprika, and red pepper flakes. Whisk until the sugar dissolves completely.
- Add the ground venison to the marinade and mix thoroughly until the meat is fully coated.
- Cover the mixture and refrigerate for at least 4 hours, or overnight if desired. Rotate occasionally for even marination.
- Preheat your dehydrator or oven to 160°F (70°C). Form the seasoned ground venison into strips on the dehydrator trays or spread evenly on a lined baking sheet.
- Place the trays in the dehydrator for 4 to 6 hours, checking for doneness. For oven cooking, ensure the temperature remains stable and bake for the same time.
- Once dried, allow the jerky to cool completely before storing it in an airtight container or resealable bags.
