  • 2 lbs ground beef
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups beef broth
  • 4 oz sliced Swiss cheese

  • Instructions

  • In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, beaten eggs, Worcestershire sauce, dried thyme, salt, and black pepper.
  • Lightly grease the insert of your crockpot with cooking spray or oil. Transfer the meatloaf mixture to the crockpot and shape it into a loaf.
  • Pour the beef broth around the sides of the meatloaf, being careful not to pour it directly on top.
  • Cover the crockpot and cook the meatloaf on the low setting for 4-6 hours, or until the internal temperature reaches 160°F.
  • Once the meatloaf is cooked through, carefully remove the lid and arrange the sliced Swiss cheese on top. Replace the lid and let the cheese melt for an additional 10-15 minutes.
  • Carefully transfer the meatloaf to a serving platter or cutting board. Slice and serve.
