  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste
  • 8 oz wide egg noodles
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)

Instructions

  • Begin by gathering all the necessary ingredients. Trim any excess fat from the beef tips and cut them into 1-inch cubes. Dice the onion and mince the garlic.
  • Place the beef tips in the bottom of your crockpot. Top with the diced onion and minced garlic. Pour in the beef broth, red wine (or additional broth), Worcestershire sauce, thyme, oregano, and bay leaf. Season with salt and black pepper to taste. Stir to combine all the flavors.
  • Cover the crockpot and cook on low for 5 hours, or until the beef is fork-tender. About 30 minutes before serving, cook the egg noodles according to the package instructions. Drain and set aside.
  • If you prefer a thicker sauce, whisk together the cornstarch and cold water in a small bowl. Slowly stir the cornstarch slurry into the crockpot and let it simmer for an additional 5-10 minutes, or until the sauce has thickened to your desired consistency.
