- 4 cups chicken or vegetable broth

- 2 tablespoons Cajun seasoning
- 1 tablespoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (or more, to taste)
- Salt and black pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the diced onions, bell peppers, and minced garlic. Sauté for 5-7 minutes, or until the vegetables are soft and fragrant.
- Once the aromatics are sautéed, add the Cajun seasoning, paprika, dried thyme, and cayenne pepper to the pot. Stir to combine and let the spices bloom for about 2 minutes.
- Slowly pour in the chicken or vegetable broth, whisking constantly to incorporate the spices. Bring the mixture to a simmer, then stir in the heavy cream. Reduce the heat to low and let the soup simmer for 10-15 minutes, stirring occasionally, until the flavors have melded and the broth has thickened slightly.
