- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 2 cups red wine (or use additional beef broth)
- 3 medium carrots, peeled and sliced into 1-inch pieces
- 3 medium potatoes, peeled and cut into 1-inch cubes
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 bay leaves
- 2 sprigs fresh thyme (or 1 tsp dried thyme)
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
Instructions
- In a large skillet over medium-high heat, sear the beef cubes in batches until they’re browned on all sides, about 2-3 minutes per batch.
- Transfer the seared beef to your slow cooker. In the same skillet, sauté the onions and garlic until they’re fragrant and slightly softened, about 3-5 minutes.
- Pour in the red wine (or additional beef broth) and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Allow the liquid to simmer for 2-3 minutes, then pour the mixture over the beef in the slow cooker.
- To the slow cooker, add the beef broth, carrots, potatoes, bay leaves, thyme, oregano, and smoked paprika. Season with salt and pepper to taste. Stir to combine all the ingredients.
- Cover the slow cooker and cook the stew on low for 6-8 hours or on high for 4-6 hours, until the beef is fork-tender and the vegetables are cooked through. Adjust the seasoning as needed.
- If you prefer a thicker stew, you can create a slurry by mixing 2 tablespoons of cornstarch or all-purpose flour with 2 tablespoons of cold water. Slowly stir the slurry into the hot stew and allow it to simmer for an additional 10-15 minutes, or until the desired consistency is achieved.
