Ingredients

  • 2 lbs Fresh Clams (steamer clams or Manilla clams)
  • 4 strips Bacon
  • 1 medium Onion, diced
  • 2 stalks Celery, diced
  • 2 cloves Garlic, minced
  • 2 medium Potatoes, diced (Yukon Gold recommended)
  • 1 teaspoon Dried Thyme
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • Salt & Pepper, to taste
  • Chives, for garnish

Instructions

  1. Rinse the clams under cold water and place them in a bowl of salted water for 30 minutes.
  2. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
  3. Add diced onions and celery to the pot and sauté until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
  4. Stir in the diced potatoes, thyme, and chicken broth. Bring to a simmer and cook until potatoes are tender, around 15-20 minutes.
  5. Add the rinsed clams to the pot. Cover and cook for 10 minutes or until clams have opened.
  6. Reduce heat to low, add heavy cream, and stir until well incorporated. Season with salt and pepper to taste.
  7. Crumble cooked bacon on top, garnish with fresh chives, and serve hot.
