4 boneless, skinless chicken breasts
8 oz. fresh mushrooms, sliced
5 oz. fresh baby spinach
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C).
Pat the chicken breasts dry with a paper towel and season them with the garlic powder, dried oregano, salt, and black pepper.
In a large oven-safe skillet or baking dish, heat the olive oil over medium-high heat. Add the sliced mushrooms and sauté them for 5-7 minutes, or until they are golden brown and tender.
Add the fresh baby spinach to the skillet or baking dish and sauté for 2-3 minutes, or until it’s wilted and fragrant.
