  • 1/2 cup milk
  • 1 egg, lightly beaten
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp. dried thyme
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup ketchup (plus more for topping)

  • Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan or a baking sheet with a light coating of cooking spray or olive oil.
  • In a large bowl, combine the ground chicken, panko breadcrumbs, milk, egg, onion, garlic, thyme, oregano, salt, and pepper. Use your hands or a fork to mix the ingredients until they are well-incorporated, but be careful not to overmix.
  • Transfer the chicken meatloaf mixture to the prepared baking dish and shape it into a loaf. Spread the ketchup evenly over the top of the meatloaf. Bake for 50-60 minutes, or until the internal temperature reaches 165°F (75°C).
  • Once the meatloaf is cooked through, remove it from the oven and let it rest for 10 minutes before slicing and serving.
