  • 1.5 lbs Boneless, skinless chicken breasts
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, diced
  • 4 cloves Garlic, minced
  • 2 tbsp Chili powder
  • 1 tbsp Ground cumin
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 (28 oz) can Diced tomatoes with their juice
  • 1 (15 oz) can Kidney beans, drained and rinsed
  • 1 (15 oz) can Corn kernels, drained
  • 2 cups Chicken broth
  • 2 tbsp Lime juice
  • 1/2 cup Shredded cheddar cheese (for serving)
  • 1/4 cup Fresh cilantro, chopped (for serving)

  • Instructions

  • Start by cutting the chicken breasts into 1-inch cubes.
  • In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the cubed chicken and sear it on all sides until it’s lightly browned, about 5-7 minutes.
  • Add the diced onion to the pot and sauté until it’s translucent, about 3-5 minutes. Then, stir in the minced garlic and continue cooking for an additional minute.
  • Add the chili powder, cumin, oregano, salt, and pepper to the pot. Stir to combine the spices with the chicken and onion mixture.
  • Deglaze the pot with the chicken broth, scraping up any browned bits from the bottom. Then, add the diced tomatoes, kidney beans, and corn. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45-60 minutes, stirring occasionally, until the chili has thickened to your desired consistency.
  • Just before serving, stir in the lime juice. Taste and adjust the seasoning as needed.
