1.5 lbs Boneless, skinless chicken breasts
2 tbsp Olive oil
1 medium Yellow onion, diced
4 cloves Garlic, minced
2 tbsp Chili powder
1 tbsp Ground cumin
1 tsp Dried oregano
1 tsp Salt
1/2 tsp Black pepper
1 (28 oz) can Diced tomatoes with their juice
1 (15 oz) can Kidney beans, drained and rinsed
1 (15 oz) can Corn kernels, drained
2 cups Chicken broth
2 tbsp Lime juice
1/2 cup Shredded cheddar cheese (for serving)
1/4 cup Fresh cilantro, chopped (for serving)
Instructions
Start by cutting the chicken breasts into 1-inch cubes.
In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the cubed chicken and sear it on all sides until it’s lightly browned, about 5-7 minutes.
Add the diced onion to the pot and sauté until it’s translucent, about 3-5 minutes. Then, stir in the minced garlic and continue cooking for an additional minute.
Add the chili powder, cumin, oregano, salt, and pepper to the pot. Stir to combine the spices with the chicken and onion mixture.
Deglaze the pot with the chicken broth, scraping up any browned bits from the bottom. Then, add the diced tomatoes, kidney beans, and corn. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45-60 minutes, stirring occasionally, until the chili has thickened to your desired consistency.
Just before serving, stir in the lime juice. Taste and adjust the seasoning as needed.
