1 lb Ground Chicken
1/2 cup Breadcrumbs
2 Eggs
2 cloves Garlic, minced
1/4 cup Onion, finely chopped
2 tbsp Fresh Parsley, chopped
1 tsp Salt
1/2 tsp Black Pepper
1/2 cup Buffalo Sauce
1/4 cup Celery, finely chopped
1/4 cup Blue Cheese Crumbles (optional)
Instructions
Preheat the oven to 400°F (200°C).
In a large mixing bowl, combine the ground chicken, breadcrumbs, eggs, garlic, onion, parsley, salt, and black pepper. Mix until well-incorporated, being careful not to overmix.
Gently roll the meatball mixture into 1-inch balls and place them on a parchment-lined baking sheet, spacing them about an inch apart.
Bake the meatballs for 20-25 minutes, or until cooked through and the internal temperature reaches 165°F (75°C).
Transfer the cooked meatballs to a large bowl, pour the buffalo sauce over the top, and gently toss to coat each meatball evenly.
Sprinkle the chopped celery and blue cheese crumbles (if using) over the top of the buffalo chicken meatballs.
