Ingredients
Scale
4 boneless, skinless chicken breasts
2 cups warm water
1/4 cup kosher salt
1/4 cup brown sugar
1 tablespoon whole peppercorns
3 garlic cloves, peeled and crushed
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried rosemary
Instructions
In a large bowl or pitcher, combine the warm water, kosher salt, brown sugar, peppercorns, garlic, bay leaves, thyme, and rosemary. Stir until the salt and sugar have completely dissolved. Allow the brine to cool to room temperature before proceeding.
Place the chicken breasts in a large resealable bag or a shallow baking dish. Pour the brine over the chicken, making sure all the pieces are fully submerged. Cover and refrigerate for 4-6 hours, turning the chicken occasionally to ensure even brining.
Remove the chicken from the brine and rinse it under cold water. Pat the chicken dry with paper towels, discarding the brine. This step is crucial to ensure a crispy exterior when the chicken is cooked.
Preheat your oven to 400°F (200°C). Place the brined chicken breasts on a lightly greased baking sheet or in a shallow baking dish. Roast for 30-40 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the juices occasionally for extra flavor and moisture.
Once the chicken is cooked, let it rest for 5-10 minutes before serving. This allows the juices to redistribute throughout the meat, ensuring a tender and juicy result. Serve the brined chicken with your favorite sides, such as roasted vegetables or a fresh salad.
