  • 4 boneless, skinless chicken breasts, cooked and diced
  • 6 slices of bacon, cooked and crumbled
  • 2 cups of chopped romaine lettuce
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of mayonnaise
  • 2 tablespoons of Dijon mustard
  • 1 tablespoon of lemon juice
  • 1 teaspoon of garlic powder
  • Salt and black pepper to taste
  • Optional: 1/4 cup of shredded cheddar cheese

  • Instructions

  • Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and any other desired spices. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Allow the chicken to cool slightly, then dice it into bite-sized pieces.
  • In a skillet, cook the bacon over medium heat until crispy, about 8-10 minutes. Transfer the cooked bacon to a paper towel-lined plate and let it cool slightly before crumbling it into smaller pieces.
  • In a medium bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and black pepper until well combined.
  • In a large bowl, combine the diced chicken, crumbled bacon, chopped romaine lettuce, and halved cherry tomatoes. Gently toss the ingredients together. Pour the prepared dressing over the salad and mix until everything is evenly coated.
