Instructions
Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the ground beef, cooked and crumbled bacon, shredded cheddar cheese, diced onion, minced garlic, eggs, and almond flour (or pork rind crumbs). Season with salt and pepper to taste, and mix everything together until well-incorporated.
Grease a 9×5-inch loaf pan and transfer the meatloaf mixture into it, pressing it down evenly. Spread the keto-friendly BBQ sauce over the top of the meatloaf.
Bake the meatloaf for 45-55 minutes, or until the internal temperature reaches 165°F (74°C). During the last 10-15 minutes of cooking, you can top the meatloaf with additional shredded cheese or crumbled bacon, if desired.
Once the meatloaf is cooked through, remove it from the oven and let it rest for 5-10 minutes. Slice and serve warm, with any additional toppings or side dishes of your choice.
